Mediterranean Stuffed Potatoes
A delicious and hearty dish featuring flavorful ground beef and kalamata olives stuffed inside tender potatoes, topped with a zesty tomato sauce.
Ingredients
- Potatoes - 4 large
- Ground beef - 1 lb
- Kalamata olives - 1/2 cup, chopped
- Tomato sauce - 1 cup
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 tsp
- Fresh parsley - for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce each one several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened.
- Add the ground beef to the skillet and cook until browned. Stir in the chopped kalamata olives, garlic, salt, black pepper, and paprika. Cook for another 5-7 minutes.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
- Mash the scooped-out potato flesh and mix it into the ground beef mixture.
- Stuff the potato shells with the beef and potato mixture.
- Pour the tomato sauce over the stuffed potatoes.
- Return the stuffed potatoes to the oven and bake for an additional 10 minutes.
- Garnish with fresh parsley before serving.
