- Chicken breast - 250g, diced
- Onion - 1, finely chopped
- Spinach - 2 cups, chopped
- Olive oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
- Garlic powder - 1 tsp
- Paprika - 1 tsp
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes, prick them with a fork, and place them on a baking sheet. Bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
- Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
- Stir in the chopped spinach and cook until wilted. Season with salt, black pepper, garlic powder, and paprika.
- Once the potatoes are done, carefully slice off the tops and scoop out the flesh to create a hollow shell.
- Mash the scooped-out potato flesh and mix it into the chicken and spinach mixture.
- Stuff the potato shells with the chicken and spinach mixture.
- Place the stuffed potatoes back in the oven for an additional 10 minutes to heat through.
- Serve hot and enjoy!
