Mediterranean Chicken with Spinach and Tomato Saute
A flavorful and nutritious chicken dish with a colorful saute of spinach and tomatoes, infused with garlic and herbs.
Ingredients
- Chicken breast - 2 pieces
- Spinach - 2 cups
- Tomatoes - 2 medium-sized, diced
- Garlic - 3 cloves, minced
Instructions
- Season the chicken breasts with salt, pepper, and your choice of Mediterranean herbs like oregano or thyme.
- Heat a non-stick pan over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side, or until fully cooked through. Remove from the pan and set aside.
- In the same pan, add a little olive oil if needed. Saute the minced garlic until fragrant.
- Add the diced tomatoes to the pan and cook for 2-3 minutes until they start to soften.
- Add the spinach to the pan and cook for another 2-3 minutes until wilted.
- Season the spinach and tomatoes with salt, pepper, and a pinch of red pepper flakes for a hint of heat.
- Serve the cooked chicken breasts on a bed of the spinach and tomato saute. Enjoy!
