- Orzo - 1 cup
Instructions
- Season the chicken breast with salt and pepper. Heat a non-stick pan over medium heat.
- Cook the chicken for 4-5 minutes on each side until golden brown and no longer pink in the center. Remove from the pan and let it rest.
- In the same pan, add minced garlic and sauté for 1 minute until fragrant.
- Add the orzo to the pan and toast for 2 minutes, then pour in 2 cups of water. Bring to a boil, then reduce heat and simmer for 8-10 minutes until orzo is tender.
- Stir in the spinach and cook for an additional 2 minutes until wilted. Season with salt and pepper to taste.
